Oat Bran Mini Muffins
The Daily Dose :)
2 teaspoons baking powder
8 tablespoons oat bran
4 tablespoons Splenda sweetener (or equivalent of any other heat stable sweetener)
1 1/2 - 2 teaspoons ground cinnamon
2 large eggs
8 tablespoons fat free plain greek yogurt
Preheat oven to 350.
Using a butter flavored spray, lightly grease muffin tins,
wiping out excess with a paper towel.
My muffin pan has space to make 24 mini-muffins.
Mix dry ingredients.
Then add the eggs and yogurt until just mixed.
Pour evenly into the muffin tins.
Bake 10-11 minutes. The muffins don't brown much on top, but the bottoms will.
This recipe will make 24 mini-muffins which is 4 servings of 6 muffins each.
Store in the refrigerator and then warm in microwave for about 10 seconds and they taste yummy.
I enjoy eating these with a bowl of fat free plain greek yogurt
sweetened with cinnamon stirred in.
